Meatless Mondays: Mujaddara with Spiced Yogurt

I'm continuing my Meatless Mondays series with a Mujaddara--an Israeli rice and lentils dish--that has a modern spin to it, adding caramelized onions and a spiced yogurt sauce.  This recipe is from Food52 website.  I have adapted it slightly as I was unable to find one of the main ingredients (Puy lentils).  I used canned lentils instead.  If you can find the Puy--or French lentils, I would recommend using them.  It does not add that much more work to the recipe.  You can find a link to the recipe here.

Mujadarra ingredients:

 3/4 cup Puy lentils (French lentils--tiny dark brown) or canned black lentils
1 teaspoon salt, divided
1 cup Jasmine rice
2 tablespoons butter
3 tablespoons olive oil
6 cups thinly sliced onions (about 3 medium)


Spiced Yogurt ingredients:

1/2 cup Greek yogurt
1/2 teaspoon cinnamon
1/2 teaspoon cumin
1/2 teaspoon coriander
1/2 teaspoon spicy paprika
3 tablespoons chopped fresh mint
juice and zest of half a lemon
1/4 teaspoon salt

Preheat oven to 400ยบ.

Lentils: 
If you have the dried lentils, place them in a large pot with 1/2 teaspoon salt and 4 cups water and bring to a boil.  Reduce heat and simmer about 20 minutes, till they're soft but not mushy.  Drain and rinse pot. 

If you are using the canned lentils, open can, rinse well, and drain.

Rice:
Place rice, the remaining 1/2 teaspoon salt, and 1 1/2 cups water to the pot.  Set heat to medium and bring to a boil.  Now, here's the interesting part that I thought would NEVER work:

When water starts to boil, cover pot and transfer to oven.  Cook for 17 minutes.  Remove from oven, uncover and fluff with fork.  And it's done perfectly!  So easy--and I'm not good at cooking rice.

 
Caramelized Onions:
While rice cooks, add butter and 2 tablespoons olive oil to a deep saute pan over medium-low heat.  When butter has mostly melted, add onions and toss to cover with butter and oil.

After about 5 minutes, when onions have softened slightly and have started to release their liquid, raise heat to medium and cook 10 to 12 minutes longer--or until they are very soft and browned.  If pan gets too dry, add water by the the tablespoon.

  When onions are well browned, add extra 2 tablespoons olive oil and raise heat to high.  Cook another 3 to 4 minutes, until bottom layer of onions has charred and crisped.  Try not to stir them too much at this point.  The recipe doesn't call for this, but I added some salt to taste here.  There's nothing like salted caramelized onions!

Combine rice, lentils, and most of the onions in large serving bowl--or like I did, the pot you cooked the rice in.  Let sit about 15 minutes, to blend the flavors together--the dish improves with age.  Taste, and add more onions if desired.  You may want to add more salt and some pepper to your taste.

Yogurt:

Mix all ingredients together in a small bowl.  Easy!

If the mujaddara has cooled, reheat in a low oven or the microwave for a few minutes.

Serve with a big scoop of the mujaddara and a dollop of the spiced yogurt.

Next time I make this, I may try it with some dried currents--or even dried cherries--and some chopped almonds.

Bad-Ass Animals: the Black Panther

Continuing my Bad-Ass Animals series, nobody is more fitting than the Black Panther.  Black panthers are actually classified as a "melanistic" (dark) color variant of several species of big cats: in Latin America they are Black Jaguars, Asia and Africa they are Leopards, and N. America they are Black Cougars.  Something I didn't know is Black Panthers are reported as "Cryptids" (unrecognized by scientific consensus--think: Bigfoot) in the US, UK and Australia.  Which makes them even cooler.  They adapt well to many different environments but, big shocker here, humans are the biggest threat to their survival.  They are endangered in most places and are considered vulnerable to their continued existence.

So, let's take a minute to admire these bad-ass beauties.

That's when imitation sets in.

And yes, sometimes the sincerest form of compliment becomes unfortunate.

And even more unfortunate, you are caught and caged so others can experience your beauty.

And yet you still prevail...

Stylin': 1970's Glam

It's been a while since I've done one of my Decades "Stylin'" posts.  I had previously gone through the 40's, 50's, and 60's, so now I'm on to the 70's.

Many an image comes to mind when I think of the styles of the 70's--including some really lame Halloween costumes!  However, I like to look at the glamor and elegance of Diana Ross, Bianca Jagger and Lauren Hutton, to name a few style icons of the decade.  Imagine going dancing (and being able to get in!) to Studio 54 and hanging out with Andy Warhol and Mick Jagger.  So here's my nod to the style splendor that made up the 1970's.

Diana Ross.  (Photo)  Arguably one of the most influential performers and artists of the decade.  Here she is in a Bob Mackie creation.

Lauren Hutton. (Photo)  She called herself the girl next door, but her humility added to her glamor.

Father's Day: Vintage Men's Ties

Poor tie: Men don't seem to want to wear you anymore.  But back in the day you added style and flair (what man doesn't want "flair") to many a suit ensemble.

In honor of our fathers, here's a look back to the many and varied patterns, colors, fabrications and styles of some vintage ties.

Artist Series: George Barbier's Illustrations

George Barbier (1882-1932) was one of France's great illustrators from the early 20th century.  Originally a fashion illustrator for several Paris magazines, he went on to create extravagant costumes for theaters, cabarets and movies.  One of these movies was "Mousieur Beaucaire" staring Rudolph Valentino.  His illustrations show the influence of the sensual, naturalistic designs and oriental style that was part of the Art Nouveau movement.

I find his use of color and mix of patterns in each of his illustrations inspiring and relevant to designers today.  The worlds he creates stimulate the imagination with their theatricality.  With a little bit of Vegas showgirl mixed in.  They look like they're having so much fun.




So ahead of his time--the pop of red shoes with the gray and turquoise dress.


Gorgeous headdress--and I love the guy peeping in on the right hand side.





The shape of her dress with the black detail and purple tassels are just exquisite.  And I love the puppy in the corner.


There are so many more!  I will have to have another installment of his illustrations in my artist series.  Maybe I'll attempt to do a few of my own.
